Have you still got lots of matzah leftover from Passover last week? If so, here are some tasty recipes you can try to use it up before it goes stale.

When you think of the Mexican breakfast dish chilaquiles as “basically just a casserole made of old, broken tortilla chips, eggs, salsa, and cheese,” as the folks over at Extra Crispy do, it makes perfect sense why you’d want to use matzah in it after Passover. Their recipe is rather simple, but you can also use an authentic chilaquiles recipe and just swap the tortilla chips for matzah. Whatever floats your boat.

Let’s take a journey from Mexico to China for our next recipe: matzah scallion pancakes from Epicurious. Their recipe only has like four ingredients outside of the matzah, salt, and pepper, and takes a mere 30 minutes to make, which is well worth it for this oniony deliciousness.
