Mediterranean Potato Salad

Roasted garlic and herbs often accompany potatoes when it comes to Mediterranean cuisine. Channel other flavors of the region by mixing boiled potatoes with diced cucumbers, cherry tomatoes, Kalamata olives, feta cheese, red onion, fresh dill, and a lemon-herb dressing.

Mexican Potato Salad

This salad is inspired by the colorful streets of Oaxaca and Cancun. Combine cooked potatoes with grilled corn, diced avocado, chopped tomatoes, crumbled Cotija cheese, black beans, diced shallots, chopped fresh cilantro, a squeeze of lime, and a bit of chili. The dish works well with sweet potatoes too.

Indian Potato Salad

Feel the heat with this fragrant spice mixture that perfectly coats the spuds. Begin by frying chopped onions with cumin, turmeric, curry leaves, and a touch of cinnamon. When fragrant, add in cubes of cooked potatoes and cover in the spices. Remove from the heat and allow to cool before combining with cooked peas, chopped red onion or spring onion, and fresh cilantro. A yogurt dressing with cumin and lime is the perfect accompaniment.
